Get More Nutrition by Choosing Produce with the Right Colors

FarmWeek, a publication of the Illinois Farm Bureau, has a great guide to determining which color of produce will give the maximum nutrition.

Here is a quick synopsis:
  • Deep reds and bright pinks (tomatoes and watermelon) contain lycopene, an antioxidant that has been suggested to fight prostrate cancer.
  • Greens can protect the eyes (spinach, collards, kale and broccoli) and may reduce the risk of cancerous tumors (cabbage, brussel sprouts, turnips, and cauliflower)
  • Orange contains beta-carotene, vitamin C and vitamin E. Everyday, eat oranges, sweet potatoes, carrots or apricots
  • Blues/Purples have flavonoid, phytonutrients and antioxidants. Blue may also ward of harmful carcinogens. Blueberries taste great and should be part of your daily diet.
